Charge Back then Forward+Strong Kick
he'll squat down then pounce toward Eyedol, again eyedol will block 9 times out of 10... however because there's no spacing after the hit any small slip up and Eyedol will combo you

So after 1 or 2 of the pounce move, when you're really close to Eyedol do this combo:
Charge Back Then Fordware+Strong Punch, Back+Medium Kick, Forward+Medium Kick.
This should do a spin attack then after a few small hits uppercut Eyedol into the air. DO NOT do this combo unless you're right up next do him, he will usually block the first few hits then let his guard down allowing you to finish the combo, however if you start the spin move too far away he will be able to block the whole spin move and then combo your ass...

Don't jump in toward him either because he'll destroy you that way too...

so do the pounce move once or twice to get in close then combo him... rinse and repeat.

I'm also playing on version 1.4, not sure if it makes a difference.


EDIT:
I was on a real KI Classic kick tonight and knocked out a bunch more achievements... I also completed the game with Spinal... beating eyedol with spinal was a real pain the ass... probably the hardest yet but if you do decide to try your luck I did it with some well placed jump kicks, some well placed slide kicks and this combo

Forward, Forward+Strong Punch, Back+Medium Punch, Down, Down, Down, Down+Any button

like Saburwulf you need to be in very close when starting the combo or else you'll be destroyed.

There is supposedly a glitch that allows you to throw infinite fireballs with Spinal once you've got at least 1 skull... I personally couldn't get the move down but if you can it makes defeating Eyedol easy when used with eyedol's health recharge glitch:
