I would imagine that a lot of it has to do with the fact that many collectors probably don't even know about the show, since they don't visit this site and have no knowledge about the gallery. I know that I wouldn't have heard about it if not for this thread, and I regularly visit forums that focus on prints and posters.
Plus, it's just difficult to buy stuff, especially art, for a game that hasn't been released yet because you can only judge the images from an aesthetic point of view. Some of the originals that haven't been sold could depict an important part of the game that everyone will want by this time next year, but because we have no narrative context for the images, they're just pretty pictures. Personally, I think it's a steal to get a framed 24x30 piece of concept art for $300 regardless of where it shows up in the game, but a lot of people would have a fair amount of hesitation about spending that kind of money on an "unknown" image.
