Maybe they are releasing it in batches to give the impression they are limited and when stocks are available again, people grab them quick in case they get sold out again.. And then Rockstar releases another batch to retailers.
I'm just guessing. I doubt Rockstar would have underestimated their sales on badly that they are sold out within days..
