You're in the UK? Look I don't like to waste money, never buy two versions of the same game. But I think it was worth it.
I got the PS3 with the signing event (to have G2) and the Xbox UK CE.

Uncharted 2 Folio Book (200 copies)
Rage of Dragon USA version (NeoGeo) (less than 100 copies)
Halo 3 brute controller signed by Macfarlane himself w/authentic paper

I actually have no idea which of my collection is the rarest... The MGS shareholder gold, MGS 2 shareholder kit, MGS 3 shareholder sealed, ico press kit or shadow of the colossus press kit.. I know these are rare and their numbers are pretty low... But really can't tell much about them as I never found enough info.

Hmmm, have to pick one eh? That's tough. Can't put a finger on a single piece in my collection that I would consider to be the "rarest", especially since a few of them have never been seen in the open market.

I'll just make it easy for myself and share a piece that resonates with me the most as it also happens to be my most favorite game of all time...that would be my Shenmue Limited Edition signed by Yu Suzuki (not to be confused with the infamous one that sold on eBay).

Words can't describe how mind-blowing this game was to me, even to this day. I still remember watching the (epic) promotional trailer found in ODM's November issue demo disc (pictured) over and over again up to the game's release.
