I can DEFINITELY confirm that they charge instantly if you choose to pay via PayPal! I just pre-ordered the Freedom Edition from them, via PayPal, and they took it straight away! Six months in advance!

I only pre-ordered from them because I don't trust GameStop UK now after the Mass Effect debacle (selling European imports in place of UK stock), and chose PayPal because my debit card will have expired by then

GAME always get an "Exclusive" special Edition. it's only a DLC edition which you get with the other CE's anyway. The only difference is that it might come with a shiny cover...
